In the past, caviar was almost exclusively produced in the Caspian Sea, but today it can be sourced from all over the world. Canterbury Cure has been leading the effort to support sustainable caviar farms on almost every continent, including right here in America, which is home to some of the world’s most prestigious caviar farms.

For almost ten years, we have focused on refining our methods. Our fish consume high-protein, all-natural diets without antibiotics or hormones, resulting in a clean and pure flavor that distinguishes our caviar. With careful oversight and a strong commitment to environmental responsibility, we rear our fish to produce caviar of the highest standard.

Each morning, fresh salmon is delivered directly to our Catskill Mountain facility, ensuring that our fish arrives fresh just hours after being harvested from the icy waters.
