Canterbury Cure Black Label is our most refined expression of smoked salmon, crafted from fresh, never-frozen Atlantic salmon fillets sourced from BAP-certified farms and smoked in small batches at our smokehouse in Wallkill, New York, in the Hudson Valley near the Catskill Mountains.

Each 3–4 lb fillet is dry-cured with salt and minimal sugar, then gently smoked over American apple and cherry wood to create a flavor that is rich, clean, and beautifully balanced. The texture is silky and luxurious, with a naturally buttery mouthfeel and a delicate, elegant smoke that enhances rather than masks the fish. The finish is long, refined, and lightly savory, making Black Label ideal for crudos, bagels, and chef-driven preparations where the quality of the salmon speaks for itself.

Black Label is Kosher and Halal certified and represents Canterbury Cure at its purest and most expressive.

Ingredients: Atlantic salmon, salt, cane sugar, and hardwood smoke.
